A few weeks ago, I made a fabulous cake that is completely guilt-free, high in protein, and delicious! Best of all, you can eat the entire ramekin sized cake for less than 250 calories!
Since you are a loyal follower, I wanted to share this delicious cake with you, so you can make it at home!

1.5 Scoops Vanilla Protein
1 TBSP Coconut Flour
1 TBSP Zero Calorie Sweetener
1 Egg White
¼ C. Unsweetened Almond Milk
1/8 tsp Baking Powder
1/8 tsp Baking Soda
1 Double Chocolate Chunk Quest Bar, divided into halves.
2 TBS Unsweetened Almond Milk
2 Dates (soaked / softened in water)
1 TBSP Water
2 TBSP Unsweetened Shredded Coconut, separated
Make the Mug Cake:
Lightly spray two ramekins with coconut oil spray.
Cut the Quest bar in half. Set ½ aside. Use 1 half of the bar, break it into small pieces. Mix all of the mugcake ingredients together in a bowl, mix the small Quest bar pieces into the batter, divide into two ramekins. Cook the mugcakes in the microwave for 1 minute each.
Pulse the softened dates, water, and 1TBS coconut in a nutribullet until a date paste forms.
Put the remaining ½ Quest Bar and unsweetened almond milk in the microwave for 1-2 minutes. Stir to make a sauce.
Plop each mug cake out on a plate. Spread the coconut caramel date paste on top of each cake, then top with the remaining shredded coconut.
Drizzle the Quest Bar chocolate sauce over the top of the cake! Enjoy a Samoa inspired Quest Cake!
